Vinifikation:Fermented in a terracotta amphora with skins maceration, aged for at least 9 months from the skins separation in a terracotta amphora performing repeated “battonage” of the noble lees. Matured for at least 3 months in bottle. Vinified in Tava terracotta amphorae. It is a macerated wine, the maceration lasts 7-10 days for the entire duration of the fermentation. After racking, the amphorae are filled and the wine is only tipped several times. Fermentation takes place with indigenous yeasts, we do not make clarifications and filtrations.
